I would consider meeting Aamir Khan. He is one of those very few versatile actors and he experiments a lot in his movies. I am sure everyone will agree with me after watching movies like Sarfarosh, Lagaan, Dil Chahta Hai Rang De Basanti. One more important aspect is that he is not the one who is looking for No.1 tag unlike most of the other leading actors.
Given a chance to meet one more actor I would love to meet Kamal Haasan.
